What a delicious week! Boy was I glad I planned ahead for leftover chicken. Having extra ready-to-go cooked chicken on-hand sure was handy for pulling meals together on the fly. How did your week go? What was your favorite dish? We had one piece of lasagna leftover so I popped it in a container and put it in the freezer. It’ll make a great lunch for somebody!

Hey Dawn, I love the cookbook. This morning (1/9) I used your recipe for Griddle Cakes. They were amazing!!! These may be the best pancakes I’ve ever eaten. Ross thought they were a little too thin (I like them that way, he likes them thicker), so next time I’ll cut the milk down a little. The idea pouring melted butter into the batter is PURE GENIUS!! The little bits of butter throughout the pancakes made it heaven on a plate! One thing I did different (only because I wasn’t smart enough to go buy more milk last night!)… I wasn’t sure if I would have enough milk, so I used 2 C milk and 1 C evaporated milk. I couldn’t tell a difference but it’s nice to know it works in a pinch. I’ll make sure I have plenty of milk on hand next time. This will be my new pancake recipe from now on!!!

Hey Julie! I’m happy you liked it! That is my great grandmother’s recipe. Very basic! And I know I say this all the time but get a box of dry milk and keep in the pantry. That way when you run out you can use that and I’ve used it alot just to keep the milk in fridge for cereal or other things my kids love with it! And if Ross likes them thicker than just add a taz of self rising mix to his pancakes just before putting them in! Great way to improvise though! I knew you would really get into this just from talking with you.
