These are simply fantastic. Every time I make them I am asked for the recipe. A simple, go to recipe when you don't have a lot of time. Lots of flavor. If you are lucky to have any left over they reheat in the microwave perfectly.

I bought 2 scallions for this recipes, but they certainly do not have white and light green parts. Green onions - with the white bulb and long green "tail" is what is meant here. A scallion is just like an onion bulb only smaller and purplish in colour and it not what is meant for this recipe.

Thanks so much for this recipe! Tried it today for breakfast and it is a hit! I actually used Brown Sugar Cinnamon breakfast bread by Sara Lee and it was delicious. Will definitely make again.

Man, oh, man. Are we soooo trying this!?! French toast is Andrew's favorite. However, we make it with gluten-free bread. Oh and I guess gluten-free flour. He's going to love it. Thanks for the recipe, Dawn.

Sorry for the confusion but the contest ended on Jan. 31st. Just can't figure out how to remove the giveaway. I wouldn't mind being your kid. Those are great lunches! Thank you for letting me know.

I don't make the lunches as much as my wife does, but she did hit on an idea to make pita pizzas that keep really well in the lunchbox. She heats up a halved pita, flips it over, tops it with sauce and cheese, and heats the bottom some more to melt the cheese. Takes ~ 5 minutes altogether to make. She then wraps it in foil and packs it in the lunchbox. My kid really likes it.

We've also done chicken fried rice, mac & cheese w/ extras (veggies, hot dogs, etc). We try to be a little creative, but sometimes just a simple PBJ cut into shapes works as well.

No microwave available at the school for this student so we put it all in the sack.
